For starters, guests of the Inn at Fox Hollow are invited to delight in a daily complimentary American breakfast buffet with all the trimmings, including scrambled eggs, chef-made omelets, waffles, pancakes, bacon, sausage, French toast, bagels, muffins, and much more. Meanwhile, the Hearth Room entices guests with gourmet coffee, tea, and homemade cookies enjoyed by a warm fireplace.

Italian for fox, Volpe serves robust seafood and meat dishes, along with expertly presented pasta and risotto, all prepared with fresh ingredients and crisp produce.

Volpe’s menu scours the Italian countryside for classics from appetizers to salads and entrées. Among the starters, look for favorites like briny and buttery Baked Clams Oreganata, garden fresh Caprese with homemade mozzarella, tomatoes and basil, and Eggplant Siciliana, a comforting baked dish with parmigiano-reggiano, fresh basil, and tomato sauce.

Speaking of fresh, Volpe’s salads run the gamut from the simple, yet classic, Caesar, to the multifaceted Insalata Quattro Formaggi, which starts with romaine and adds the semi-soft Italian cheese Bel Paese, goat cheese, parmesan, and feta, with plum tomatoes, roasted garlic, and red wine vinegar.

What is perhaps the most intriguing section of Volpe’s menu is split into two parts: The Classics and Pasta & Risotto. Both read like random cards pulled from grandma’s recipe box, with time-tested plates like Shrimp Francese, Chicken Marsala, Linguine with White Clam Sauce, Bucatini Amatriciana, and Capellini Pescatore.

The Entrées menu completes the journey with an array of hearty dishes set to satisfy even the most voracious appetites. Meat-forward meals like Certified Black Angus Filet Mignon are prepared with Gorgonzola Cheese and a Port Wine Reduction, while the grilled Veal Chop is the picture of delicious simplicity, with sautéed mushrooms. The Colorado Rack of Lamb is a visual showstopper, complete with an herb breadcrumb crust, while Volpe goes fishing with Chilean Sea Bass, Wild Norwegian Salmon, and Branzino All’ Espresso, which features a crust of cracked pepper and ground espresso beans.

Then there’s the Herb Roasted Chicken, a deceptively simple dish whose proper execution is the true mark of a skilled chef. Volpe also features a special lobster menu on Wednesdays, along with a Prime Rib menu Thursdays.
